Eating from the freezer/pantry

Ok, I skipped posting about last week's plan (I've been skipping a lot lately for my own sanity), but I'm back to report on the results. My husband actually mentioned that he noticed a decrease in our food amounts and thanked me for doing it, which was a very nice incentive to keep going. He also has not eaten only one of the dinners I've made, and seemed pretty content with all the other meals. It's hard to tell with him sometimes.

From what he's told me, sometimes, even if he really does like something I make (I question the validity of this statement, but I trust him) all he wants to eat for dinner is cereal; Fruit Loops or Apple Jacks are his current favorites. Sometimes I put forth that extra effort, and work very hard to make a dinner that's good, well balanced, and well colored (full of green, red and orange, not just white!) You know, one of those meals that makes you feel like you earned the Good Housekeeping seal, the pat on the back for being super mom, makes you hold your head a little higher, like the dinners that my mother-in-law makes all the time, etc. Then, DH comes home and all he wants is sugar-coated junk food. *sighs* It must be those pregnancy cravings of his kicking in on those nights. It definately makes my self-claimed Mom of the Year trophy look a little tarnished, and is probably God's way of asking me to grow in humility. I really hate that kind of growth. *smiles*

BUT, all in all I would say this week was a success for four specific reasons:

1) I have discovered that I love couscous!!

2) My kids have discovered the same love of couscous, in addition to a love of applesauce, and a renewed love of broccoli (dinosaur trees.)

3) I finally discovered the secret to keeping my almost 2 year old pacified while he waits for me to finish dinner and for Daddy to get home: carrot sticks as an appetizer!

4) I did get overwhelming praise from my husband for my french bread pizza dinner a few nights ago, something that I make for virtually no cost, takes virtually no time to prepare or cook, and apparently is good enough for even him to consider eating the leftovers for lunch the next day. (You have to have met my husband and understand his boycott of all foods leftover to realize what a big deal this is.)

For breakfasts this week we had the following: cereal, oatmeal (didn't go over well with the kids or the Daddy, but I enjoyed it!), pancakes, and blueberries and yogurt.

Lunches consisted of the following: PB&J, bologna sandwiches, chicken strips, and leftovers.

And now for dinners and estimated costs for the entire meal:

Chicken on a stick, teriyakki style, couscous, carrots, pears ($3)
Baked ziti, applesauce, carrots ($2.50)
Sausage and mushroom stromboli (OH WOW this was really good!) ($2)
Garlic chicken stir fry, applesauce, dinosaur trees (broccoli) ($2.50)
French Bread pizza, apples and blueberries, california style veggies ($1.75)
pancakes and applesauce (out of desperation after plans changed last-minute) ($2)
and of course, dinner out!

Out of everything we ate this week, I bought the fruit (blueberries were on special for $.99), bread, applesauce, couscous, yogurt, and carrots, but the rest was already ours and counted towards my eating from the freezer/pantry theme.

I'll make up our dinner plan for the following week tomorrow sometime, but now it's off to bed to get some rest and prop up my feet!

Eating from the pantry/freezer week 1 recap!



Ok, last week went pretty well! I stuck to my proposed menu almost exactly, and everyone was very happy with the variety of meals, even the kids!

I also found out that both my husband and my children LOVE pork chops. I've made pork chops before, but this time I used a pork loin that I had gotten at Kroger a couple of months ago for about $2/lb and just sliced it up into pork chops. They were so much more tender than I remember. I am totally attributing that to the cut of the loin.

I also made them a couple of different ways, and my husband LOVED the Jaeger Schnitzel that I made. He loved it so much that he ate it right out of the pan, not even letting me put it on a plate or put gravy on it, which must mean that he really loved it! I found the recipe on Allrecipes.com, which is my favorite recipe resource. I'm including the link HERE if you're interested, although I altered it slightly, but you get the basic idea.

Anyway, the pork loin cost about $10 and made three regular meals, plus I used the leftovers once for dinner and then cut up the rest of the leftovers and made stir fry with it, so all in all, it made five total meals! I'm so glad that I bought three of them when they were on sale, and will definately be doing it again!

I'm really enjoying this challenge and am so glad that my husband pushed me to do it. Shhhh! Don't tell him I said that though!

By the way, the picture in this post is of the jaeger schnitzel, but it's not MY jaeger schnitzel. Like I said, my husband didn't even let me put it on a plate, so taking a picture was out of the question, but isn't it pretty?!

Eating from the freezer/pantry

My husband has been nudging me to use up our bountiful supply of food in our freezer instead of grocery shopping, and part of me has been stocking up on food in anticipation of the new baby.

I remember how exhausted I was when the last one was born and I had two to take care of, and I can only imagine how much more tired I will be with three little ones. I've been emotionally stocking up on food to make me feel better prepared, but I have a ton of food and even in the freezer, it doesn't last forever! SOOOOOOOOO when Moneysavingmom and Lifeasmom posted that they were going to be hosting an eating from your pantry challenge this month, I (reluctantly) decided to jump on board.

As they both wrote about, this will work differently for every person, and I am still going to be grocery shopping to some extent and stocking up on a few select deals (TRYING!), but mostly I'll stick to buying only essential things like milk, fresh fruit (which we eat all day long), bread, etc.

I started this week, so I'll be posting about what we ate, what was from my stock, and maybe even prices. We'll see. Here is the menu that I've worked up for this week:

Sunday:
pancakes (I made 6x the recipe last time I made these, so I have plenty left over and the cost for the amount we ate was probably about $.05 total)
sandwiches, canned peaches, and carrots ($.40 sandwiches, $.20 peaches, $.40 carrots = $1.00)


Monday:
cranberry orange muffins ($.65)
bean and cheese burritos and peaches ($.50 burrito stuff, $.35 peaches = $.85)
eat out (I was at the dr's office for about 5 hours, so it was an un-planned food run)

Tuesday:
cereal and yogurt ($.05 cereal, $.25 yogurt = $.30)
bologna sandwiches, strawberries, pound cake ($1.25 sandwiches, $.50 strawberries, FREE pound cake-courtesy of my MIL = $1.75)
beef stroganoff (hamburger helper, hey, it was easy and cheap!), salad, strawberries ($.55 HH, $.55 meat, $.75 salad, $1.00 strawberries= $2.85)

Wednesday:
pancakes ($.05)
been and cheese burritos, strawberries, and apples ($.50 burritos, $.50 strawberries, $.40 apples = $1.40)
pork chops, salad, mashed potatoes, peaches, and rolls ($4.00 pork chops, $.50 salad, $.35 mashed potatoes, $.20 peaches, $1.00 rolls = $6.05)

Thursday:
cereal and yogurt ($.30)
sandwiches, peaches, cookies ($.50 sandwiches, $.20 peaches, $.10 cookies = $.80)
breaded pork chops, mac and cheese, salad, cantalope ($3.00 pork chops, $.80 mac & cheese, $.75 salad, $.50 cantalope = $5.05)

Friday:
cereal and peaches ($.25)
leftovers (FREE)
????????????????? (sorry, but I honestly don't know!)

Saturday:

Of the meals that I made this week, only about $6.00 was spent at the store, the rest of the ingredients were all from my freezer/pantry. I didn't think this would be fun, but it kind of is!
